COOKING CLASSES

Sandhiya customized a series of private cooking classes for me and over the weeks that I studied with her she taught me much more than recipes. She taught me a philosophy of life and the role of diet in the Ayurvedic tradition. I learned which herbs and spices to always have on hand and how to store them, which herbs to grow in my garden, where to get the best ingredients including spices, herbs, produce and kitchen equipment, the secrets to making the perfect ghee, how and why to use a pressure cooker, how to cook for a party, how to to be relaxed while chopping vegetables and the joys of food to the senses. She began each class with a short prayer and ritual so that our efforts would be blessed, which shifted my attitude about cooking from being a material endeavor to being a spiritual and soulful experience. She also taught me the types of dishes from Southern and Northern India. At the end of each class we sat down together to share the most exquisite meal!
What was also so very special to me was that she spoke to her family in India each week before our classes and told them what she was preparing to teach me. She said that her parents were very enthusiastic about my classes and always gave her their input as to which ingredients and dishes she should make sure to include. I felt connected to her family because of this and because of the fond memories she shared with me about them as we chopped vegetables together. As a final thought I would like to say that the way that Sandhiya spoke about cooking was part of the magic for me. She referred to ghee as an elixir of Ayurveda and Mung Dal as the queen of lentils. These colorful descriptions opened my sense of wonder to the poetry of cooking.
In the years since my cooking classes with Sandhiya we have remained in touch and I have since adopted a vegan diet. Sandhiya has been kind enough to share with me ways to adapt the dishes she taught me to a vegan diet.
